Their shape and the particular punching down system guarantee a delicate but decisive winemaking process, capable of enhancing the aromas, the balance of the tannins and the characteristics of each variety. The different lots, separated by variety, have undergone malolactic fermentation in new French oak barriques and then aged for approximately 18 months before being assembled.
