The vines are trained using the spurred cordon system, with a yield of 30-35 quintals per hectare thanks to a very strict grape selection process. Selection and harvest are done manually. Spontaneous fermentation takes place in 70-hl truncated cone-shaped wooden vats, with long macerations and frequent pumping over. Aging takes place in 30-hl Slavonian oak barrels, from 24 months for the Rosso, 42 months for the Brunello, and 52 months for the Riserva. A period of bottle aging follows.
